Every celebration calls for turkey! Christmas is that time of the year for family gatherings; hence, we will share our special Christmas dinner recipe for you and your loved ones to enjoy – roast turkey stuffed the old-fashioned way.

Preparation time 20 minutes
Cooking time 6 minutes plus 3 hours roasting
Ingredients:
- 3 tbsp butter
- 1 tbsp vegetable oil
- ¾ cup chicken broth
- 1 tsp baking powder
- 1 tsp poultry seasoning
- ¼ tsp black pepper
- 1 pc large yellow onion, chopped
- 5 cups corn bread, crumbled
- 5 cups toasted bread crumbs
- 1 pc egg, beaten lightly
- 1 pc turkey
Procedure:
1. Melt the butter in a medium-sized sauce pan over moderate heat. Add in the onion and cook until tender then remove from heat.
2. Mix the baking powder, pepper, seasoning, bread crumbs, and corn bread in a large bowl then add the onion mixture. Whisk the egg and the broth together in a separate bowl then add to the bread mixture.
3. Rinse the turkey and pat dry then remove the neck and giblets before stuffing, and then truss the turkey. Put it on a roasting pan with the breast side up and brush with oil. Put a thermometer in the thigh area, avoiding the bones. Cover and set aside the remaining stuffing in a lightly-greased casserole to refrigerate.
4. Roast the turkey for three hours or until the thermometer reaches 180 degrees.
5. Bake the remaining stuffing with the turkey during the last 30 minutes. Add about two tablespoons of chicken broth should the stuffing go dry. Let it stand for 15 minutes before carving the skin.
Cooking Tips:
To avoid overbrowning or burning some parts of the turkey, cover it with foil if necessary.
If served with gravy, add some drippings from the roast to the gravy to give it a delicious taste.
