This holiday season is a time for family and friends to get together.  That means lots of parties and a busy kitchen!  Here is a quick and easy recipe for potato cakes that you can serve as appetizers in your gatherings.

Serves  8

Preparation time: 20 minutes

Cooking time    15 minutes


  • 450 g   potatoes, peeled
  • 1 pc     egg, beaten
  • 1 tbsp   plain bread crumbs
  • 2 tbsp   butter
  • ½ pc    yellow onion
  • 2 tbsp   parsley, minced
  • ½ tsp    thyme, chopped
  • ½ tsp    salt
  • ¼ tsp    black pepper

Cooking Procedure:

1. Grate the potatoes and put them in a bowl with ice-cold water, then grate the onions.

2. Mix the salt, pepper, bread crumbs, egg, thyme, and parsley in a large bowl.  Drain the water from the potatoes, removing any excess liquid and then add them with the onions to the bread crumb mixture.

3. Melt the butter in a non-stick skillet over medium heat.  Put in about ¼ cup of the pancake batter into the skillet and flatten using a spatula.
